Brinjal Curry for Biryani | Ventuno Home Cooking (00:02:24)
Everyone has heard about those eggplant fries and curry's, but what about a curry made exclusively as a side dish for Biryanis? It’s a completely new concept to you, isn’t it? We have never thought of trying a dish with the sore purpose of it becoming a side for biryanis before.
But, isn't listening to all this making you curious? Does it not make you want to taste it too? Well, you can do so, and do so very easily.
All you have to do? Follow a few simple steps to make the dip yourself.
Brinjal - 5 nos
Whole spices (Cinnamon, Cloves & Cardamom)
Onion - 2 no
Chopped Green chili - 2 no
Garlic paste - 1 tsp
Ginger paste - 1 tsp
Tomato Puree - 1 cup
Turmeric powder - 1/4 tsp
Chili powder - 2 tsp
Rock salt - 1 tsp
Tamarind puree - 1/2 cup
For Masala powder:
Peanut - 3 tsp
Peppercorns - 1/2 tsp
Sesame seeds - 1 tsp
Cumin seeds - 1 tsp
Add peanuts, peppercorns, sesame seeds and cumin seeds to a mixer jar and grind it into a fine powder.
Add a little oil in a saucepan and add the wholespices (cinnamon, loves, cardamom), sliced onions, few curry leaves and the chopped gree chillies to the pan.
Saute the ingredients until they are a nice golden-brown in colour.
Now, add the garlic paste and ginger paste to the pan. Mix well.
Add a cup of tomato puree to the pan and give it a quick stir.
Add the turmeric powder, chilli powder and rock salt to the pan and mix it so that the powders are blended in properly.
Let it cook until the raw smell goes off.
Meanwhile, take a few brinjals and cut off the crown.
Make four slits on each brinjal.
Once the raw smell goes off, add a cup of diluted tamarind puree to the pan.
Reduce the flame and add a little water to the pan and mix well.
Now, add the brinjals to the curry. Mix well.
Close the pan with a lid and let it cook until the brinjals are completely cooked.
Once the brinjals are cooked, add a little jaggery and two Tsp of the masala powder to the curry and give it a quick stir.
Finally, simple yet delicious Brinjal Curry is ready to be served!
You can have it with chicken biryani, mutton biryani or even vegetable biryani! Serve hot!
